Bulgur  Triticum durum
A whole grain, usually made from durum wheat, that has a chewy yet fluffy texture and a nutty flavor. Bulgur is a nutrient dense food unlike other grains because it undergoes minimal processing so it still retains its vital nutrients.

A staple to the Middle Eastern diets for thousands of years and traditionally used to make tabbouleh. One of the first processed foods, wheat is soaked, cooked, then the outer bran is removed and you have cracked wheat or bulgur.
