Beet, Basil and Goat Cheese Salad
 
Ingredients

5 beets
1/4 cup goat cheese
balsamic vinegar
olive oil
fresh basil
salt and pepper to taste

Instructions

Boil beets until tender, about 30 minutes or until they can be pierced with a fork. Rinse in cool water and peel off the skin. Quarter the beets. Toss with goat cheese, vinegar, olive oil and fresh basil. Season with salt and pepper. Try different variations of basil such as cinnamon, lemon and Thai.
