Citrus Ginger Carrots

2-3 carrots, peeled, sliced and steamed for 8 minutes
2 tablespoons butter
Juice of 1 large orange (or any combination of citrus-blood orange, tangerine, grapefruit)
1 tablespoon honey
¼ teaspoon ginger, freshly grated
Orange zest
Fresh parsley, chopped (or thyme, mint or basil)
Salt and pepper to taste

In sauté pan, on medium to low heat, melt butter. Add in citrus juice, honey, ginger and orange zest and stir. Stir in carrots and saute for two minutes and remove from heat. Season with salt and pepper. Garnish with fresh herbs.
