Collard Greens

2 pounds collard greens, trimmed of stems and chopped
2 cloves of garlic, chopped
1 onion, chopped
2 tablespoons apple cider vinegar
1 tablespoon honey
1 tablespoon oil
sriracha or another hot sauce to taste
salt and pepper

Add greens to a pot large enough to cover them with water. Add salt to water. Bring to a simmer over medium heat for 8 minutes. Remove from heat and drain. In a saucepan saute onion and garlic in oil until almost soft. Add greens, vinegar and honey. Season to taste with hot sauce, salt and pepper.
