Corn Salsa
 
Ingredients

4 cups fresh organic corn kernels
1 chopped tomato
1 jalapeno pepper, seeded and chopped
2 minced garlic cloves
1 finely chopped red pepper
1 tablespoon Bragg apple cider vinegar
juice of 1 lime
2 tablespoons fresh chopped cilantro
1/4 tsp cumin
salt and pepper to taste

Mix all ingredients and refrigerate for 4 hours or overnight.

Only use fresh cilantro, it makes a big difference in the flavor.
