Curried Pumpkin
 
Ingredients

2 pounds pumpkin, peeled and chopped
1 onion, chopped
2 cloves garlic, minced
curry powder to taste
salt and pepper to taste
juice of lemon
2 tablespoons olive oil
2 cups vegetable broth

Instructions

Saute pumpkin and onion until onion is soft. Add remaining ingredients and simmer until cooked, about 15 minutes. Season.

Serve over rice or noodles.
