Salmon Cakes

15 ounces canned wild caught Alaskan salmon, drained
1/2 onion, finely diced
1/2 green pepper, finely diced
2 eggs
1/2 cup to 1 cup whole wheat bread crumbs
1/2 teaspoons old bay seasoning
2 tablespoons fresh parsley, chopped
salt and pepper
coconut oil for sauteing

Mix together ingredients. Form into patties and saute in coconut oil over medium heat until crispy brown on the outside.

Serve with tartar sauce.
