Southern Greens
 
Ingredients

2-3 pounds fresh greens, cleaned and chopped in strips
1 fresh pepper, left whole (the hotter the better!)
3 cloves of garlic, left whole
2 teaspoons salt
lots of fresh ground pepper
1 small onion, chopped
1 clove garlic, minced
1 tablespoon olive oil
salt and pepper to taste
pepper vinegar to garnish

Instructions

In a large pot, add greens and cover with water. Add the salt, garlic and pepper. Cover and boil for about 1 hour. Drain in sink. Heat oil in a frying pan and caramelize onions. Add greens and garlic, saute until tender. Season to taste. Top with pepper vinegar.

Note: When cleaning greens remove hard veins in leaves and stems.
