Soy Chorizo Twice Baked Potatoes

3-4 medium sized baking potatoes
Soy chorizo
½ cup shredded natural cheese
2 tablespoons greek or soy yogurt
2 tablespoons scallions, chopped
salsa and guacamole on the side

Wash the potatoes and slice in half. Place halves back together, wrap in foil and poke several times with a fork. Bake in 375 degree oven for 45 minutes or until done. Remove and allow to cool. Scoop out the center of the cooled potatoes and mix with ½ cup of the soy chorizo, ½ cup shredded cheese and 2 tablespoons of greek yogurt until the flavors blend. Stuff potatoes with filling and place in a deep baking dish. Bake potatoes in a preheated 350 degree oven for 2o-25 minutes or until the skins are crisp. Top with salsa and guacamole.

Sweet potatoes are delicious in this as well.
