Spaghetti Squash in Spicy Tomato Sauce

2 medium size spaghetti squash
1 red onion, chopped
1 green pepper, chopped
fresh herbs such as basil and oregano
(or about 2 teaspoons Italian seasoning)
2 cloves garlic, finely minced
1/4 cup crushed tomatoes
2 tablespoons honey
1 teaspoon sriracha to start (more to taste!)
olive oil
salt and pepper to taste

Poke holes in spaghetti squash with a fork and place in a baking dish. Bake in 350 degree oven for 1 hour. Remove from oven and cool. Cut squash in half, and use a fork to break apart the flesh into \"spaghetti strands\". In a saute pan, heat olive oil and saute red onion for several minutes. Add green pepper for another couple of minutes. In a separate bowl, mix together tomatoes, honey and sriracha. I use a tablespoon of sriracha in this recipe so adjust the sauce to taste. Toss the fresh herbs and garlic with the onions and green peppers. Add the spicy tomato sauce and the spaghetti squash. Season with salt and pepper to taste. Stir until thoroughly heated. Enjoy!

I like to top with nutritional yeast for a vegan treat or shredded raw cheddar for a hearty \"spaghetti\" meal.
