Spanish Baked Fish

2 pounds fish fillets
1 red onion, sliced
1 tomato, sliced
2 cloves garlic, minced
2 tablespoons olive oil
1/4 teaspoon hot paprika
1 tablespoon fresh oregano, chopped
juice of 2 lemons or oranges
salt and pepper to taste

Whisk together garlic, olive oil, paprika, oregano and citrus juice. In a covered baking dish lay the fish in the bottom and layer the vegetables on top. Season each layer as you go. Pour the marinade over the fish and vegetables. Cover and chill for 30 minutes. Remove from the refrigerator and place in a preheated 350 degree oven. Bake covered for 15 minutes. Remove lid and bake another 10 minutes or until fish flakes with a fork.
