Spanish Fava Beans
 
Ingredients

1 pound fava beans, frozen or fresh and lightly steamed
2 garlic cloves, finely chopped
3 tablespoons organic tomato paste
1 red onion, chopped
2 tablespoons olive oil

As many as the following as you can, its worth the effort:
1/2 teaspoon saffron strands
1/4 teaspoon nutmeg
1/2 teaspoon cumin
1 teaspoon paprika
1 bay leaf
1 tablespoon mint, freshly chopped
2 tablespoons parsley, freshly chopped
salt and pepper to taste

Instructions

Saute onion and garlic in oil until soft. Add fava beans and enough water to cover lightly. Add remaining ingredients and simmer for 10 minutes until fava beans are cooked and sauce has cooked down. Season and remove bay leaf.
