Spanish Orange Salad

1 Spanish onion, sliced
5 oranges, peeled and quartered, remove white pit
2 tablespoons sunflower seeds
salad greens
2 tablespoons mint, freshly chopped
2 tablespoons parsley, freshly chopped
6 tablespoons olive oil
2 tablespoons red wine vinegar
dash of honey
garnish with pomegranate seeds (optional)

Make a vinaigrette by whisking together the fresh herbs, olive oil, honey and red wine vinegar. Season. Make a salad with remaining ingredients and toss with vinaigrette.

Variation: Add 2 peeled and chopped fennel bulbs.
