Stuffed Scalloped Squash

4 squashes
1 red onion, diced
1 cup sunflower seed or raw cashews
1/2 cup goat cheese or vegan cream cheese
2 tablespoon bread crumbs
2-3 tablespoons fresh basil, chopped
salt and pepper to taste

Cut out the tops of the squash by cutting at an angle. Roast squash in 350 degree oven or until easily pierced with a fork, about 25 minutes. Remove from oven and cool until you can scoop out the center.

While squash is roasting, saute onion in oil over low heat until caramelized. Blend the removed squash, caramelized onion, basil sunflower seeds and bread crumbs until mixed. Season to taste and stuff inside squash. Return to oven until brown on top.
