Swedish Bruna Bonor Old Fashioned Beans
 
Ingredients

1 2/3 cups dried brown, kidney or navy beans
5 cups water
2 teaspoons salt
3 tablespoons molasses
3 tablespoons vinegar
sprinkle or two of cinnamon or nutmeg

Instructions

Add salt to a pot of water and soak beans, covered overnight. The next day, bring to a boil quickly and then turn down to a slow simmer to cook the beans slowly, covered until tender, 1 1/2 to 2 hours. Add more water if necessary. In the last 10 minutes of cooking time add in molasses and vinegar. Season to taste with pepper, salt, molasses, vinegar and cinnamon.
