Swedish Potato and Beet Salad
 
Ingredients

1 pound of new potatoes, peeled, chopped and cooked
4 beets, peeled, chopped and cooked
2 tablespoons onion, chopped
2 tablespoons parsley, chopped
2 tablespoons capers
3 tablespoons apple cider vinegar
1 tablespoon honey or agave
5 tablespoons olive oil
2 tablespoons prepared mustard
salt and pepper to taste

Instructions

Boil beets and new potatoes until fork tender. Run the beets under cold water to easily slip off skins.

Whisk together the remaining ingredients to form dressing. Toss with potatoes and beets. Marinate in refrigerator for several hours prior to serving.
