Sweet Chili Cucumber Salad
 
Ingredients

3 large cucumbers, peeled, cut into thin slices
1/2 sweet onion, sliced
3 tablespoons fresh cilantro, chopped
3 tablespoons fresh thai basil, chopped
2 tablespoons rice wine vinegar
1 tablespoon honey or agave
3 tablespoons sweet chili sauce
1/2 cup cashews or sunflower seeds (optional)

Instructions

Whisk together vinegar, sweetener, cilantro and sweet chili sauce until blended. Add cucumber slices and onions. Refrigerate before serving.

This can also be made into a spring roll by using rice paper and grilled tofu along with the cucumber mixture as a stuffing.
