Sweet Potato Curry

2 medium sweet potatoes, peeled and diced
1 onion, chopped
2 cloves of garlic, minced
1 teaspoon grated fresh ginger
1/2 cup fresh greens (mustard, turnip or spinach)
3 tablespoons fresh cilantro
1 cup coconut milk
1 teaspoon curry blend (or more to taste)
2 tablespoons oil
salt and pepper to taste

In large pot, saute onion and garlic on medium heat for about 2 minutes. Add sweet potatoes and continue sauteing for another 8 minutes. Add ginger and the greens, toss for a minute or two. Add coconut milk and curry blend. Keep on low simmer until the sweet potatoes can be pierced with a fork. Stir in cilantro prior to serving.
