Sweet Potato Rutabaga Kale Stew

3 medium sized sweet potatoes (cubed)
1 1/2 pounds kale (chopped)
1 large rutabaga (peeled and cubed)
1 onion, chopped
1/2 cup vegetable stock
2 cloves garlic, minced
1/2 teaspoon nutmeg
1/2 teaspoon paprika
salt and pepper to taste

In large dutch oven, saute onion in oil until caramelized, about 5-7 minutes on medium heat. Add sweet potatoes and rutabaga. Saute for 2-3 minutes. Add in 1/2 cup vegetable stock, nutmeg, paprika, kale and garlic. Season with salt and pepper. Place covered in 350 degree oven for 30 minutes until tender. Stir once or twice during cooking time, adding more stock as needed.
